Through strict laws, alligators may be harvested during state-controlled public hunts. Programs have been established by states for the removal of nuisance wild gators. Alligators are raised on farms for their skin and meat. Since the early 1800s, alligator skins have been sold to tanneries around the world for excellent high-quality leather. The by-products of this industry are the heads, feet, and teeth that are sold as souvenirs. With a population of 5 million wild alligators, the contact between people and alligators is increasing daily.

You are buying one similar to those pictured but not the exact one pictured. These alligator heads are approximately 5 inch to 6 1/2 inches long, sourced from 3-foot alligators. They might have chipped and/or missing teeth, scratches, and other imperfections from living in the water, fighting, and aging. A taxidermy process cures the alligator skin and the alligator skull so it will be preserved for years. Alligators have between 74 and 80 teeth in their mouth at a time. As teeth wear down, they are replaced. An alligator can go through 2,000 to 3,000 teeth in a lifetime. There will be an odor from the clear sealant used on these heads. The odor will subside over time. These are real gator heads - NOT replicas.

Submerge links in barely simmering water (do not boil hard or casings will burst) for 10–12 minutes until heated through (internal temp 160°F).
Preheat to 375°F. Lightly brush casings with butter or oil. Cook for 10–14 minutes, turning halfway through until the skin is delightfully crispy.
Place over indirect, medium-low heat on pecan or hickory coals. Turn frequently for 8–10 minutes until casings are taut and lightly charred.
Thaw overnight in the refrigerator. Transfer to a heavy Dutch oven or saucepan over medium-low heat, stirring occasionally until hot and bubbling.
